Italian – (Tomato sauce+ demiglaze+ chopped shallot           Small entrees + brains +lamb mushroom +lean ham +fine harbes )                                        cutlets and liver
Chaudfroid – (Tomato sauce+ aspic jelly )                           Cold cuts+ eggs +chicken.
