Ingredient
2 piece - cucumbers
2 table spoon - cider vinegar / normal vinegar
2 table spoon - castor sugar / ground sugar
20 ml - thick cream (soured )
50 ml - hung curds
4 spring - onion ( thinly sliced )
Small bunch - chives, snipped (may use the dried one )
Small bunc - dill, snipped (may use the dried one )
A pince - paprika
Method
· Sprinkle the cucumber with the salt, vinegar and sugar.
· Leave it to stand in a sieve stand over a bowl for 30 minutes.
· Then gently squeeze between sheets of kitchen paper to remove excess juice.
· Place the soured cream and curds in a bowl with the remaining vinegar and sugar, spring onion, chives, dill and celery ( if using ).
· Season to taste, fold in cucumber and serve with a dusting of paprika / may use chilli powder as well.
Pre serving : Protein: 3 g, Carbohydrates: 5g , Fat : 7g , Fibre : 3g.
