Parsley butter Sauce – Butter + lemon juice + chopped parsley + seasonings. Serve with grilled meat and grilled fish.
Anchovy butter – Butter + seasoning + anchovy. Serve with grilled and fried fish.
Shrimp butter – Half of finely pounded shrimp and half butter sieved. Serve with shell fish.
Beurre manie - Prepare a paste of equal quantities of butter and flower which is uncooked use for the thinking agent. Serve with vegetable and fish.
Brown butter – Brown the butter on gentle heat and get a even brown colour pork over the food immediately. Serve with fish meuniere.
Garlic butter – Soften butter garlic paste + lemon juice. Serve with grilled steakes.
